Through Offer vs. Serve United States Department of Agriculture (USDA) guidelines, school meals offer students the opportunity to create a meal from a variety of food groups.

The Food Groups Include:

For breakfast

Students may select from the Grain, Meat, Fruit, and Milk food groups. They may select three or four of the above food groups. One of the choices must be from the fruit group.

For lunch

Students may select three, four, or all five of the above food groups to complete their meal. At least one of these choices must be from the fruit or vegetable group.

Our meals meet the following guidelines:

  • Calories from total fat will not exceed 30%
  • Calories from saturated fat will not exceed 10%
  • Offer a variety of fresh fruit and cupped fruit (containing only natural juices or light syrup)
  • Offer a variety of vegetables and salad options to include locally grown produce
  • Offer a variety of low fat and fat free milk choices
    • Fat free unflavored
    • Low fat unflavored (1%)
    • Fat free chocolate
  • Offer a variety of whole wheat and whole grain bread choices
  • Offer 100% fruit juice which is fortified with calcium and vitamin D.

How Are Menus Designed in Palm Beach County?

Menus are designed to meet the United States Department of Agriculture's nutrition standards by grade level.  Each level has a variety of entrées and side choices offered daily.  Menu items are rotated throughout the school year based on student feedback, availability and seasonal selections.

During the menu design process, the Department utilizes suggestions from our Menu Advisory Board.  The Menu Advisory Board is a diverse group of cafeteria managers representing all grade levels and all regions throughout the county.  In addition to the managers' suggestions, a central office team of registered dietitians and administrators ensure menus are designed to be in compliance with the federal regulations.

If you are a Palm Beach County student, here is your chance to make suggestions for your breakfast and lunch menu! Keep in mind that not only do your menu ideas need to be healthy, but they also need to be food selections that you think your fellow students will also enjoy.

After School Snack Program

The After School Snack Program offers free nutritious snacks for qualifying sites. In order for an after school program to qualify for free snacks, it must offer student enrichment programs. In School Year 2013-2014, the Reimbursable Snack Program served 1,420,000 snacks.
